       @trabern My grocery store does a wonderful Hatch chile roast every weekend this time of year, but I can only dream of the glory available to those actually in New Mexico

       @ricci We get strangely fickle about our sources.   My fam hunts down a roaster named Fred who sources several chile varieties from Lemitar (got a mild that made my thighs sweat and a medium I am afraid to try).  I also love some of the more north Chimayo/Santa Clara chile that had red in it,  but time consuming to peal.
