       @deprecated_ii That's rough fam. I fucked up a gumbo the same way by not too long ago by not sweating my trinity long enough. Not much you can do about it unless you want to stick that shit in a crockpot on low for a couple of hours and hope you don't end up overcooking the beef.

       @Bead I don't think I made a mistake or can fix it, I think one of the peppers was harvested at the wrong time and is just tough. it's not every chunk of pepper, just some of themI'm increasingly seeing poor quality produce in the stores, particularly with onions. several times now I've gotten a small bag of onions to use within a few days and when I'm cutting them up 1-3 of them will have bad spots I have to cut off

       @deprecated_ii For real, there is something wrong with onions and it has been going on for most of the year.The peppers were probably just undercooked.
