2 hrs in.Smoker was at 245°FAdd wood chunks.Shuffle the racks to even out temps.(Still fighting back the anger over the rack of ribs that was ½ sliced through and hidden in the middle of a 3-pack by the butcher/packager 🤬)

@m00se @m00se @D00B >mild heatGreat looking pieces of meat. 22lbs of ribs are arriving in a few days for me.Using mustard isn't necessary. Dry brine (cure) overnight, or for a couple days for bigger cuts. Add your salt (1/2 tsp per pound meat, or more, if you prefer), let it sit for a minute, then add your rub and put it in the fridge. The only reason you might get something out of putting mustard covered meat in the fridge overnight is if the vinegar in the mustard tenderizes the surface (though just one to two hours in vinegar would work better). I don't think that even quality/fresh mustard would have any flavor left after hours of cooking. Herbs and spices don't penetrate meat, but anything that's water soluble can potentially penetrate with a [dry] brine.The premade spice mix is overpriced (especially considering that it's not organic). You can get pounds of fresh organic herbs and spices (and more) for cheap at https://essentialorganicingredients.com - though if you can't manage to replicate the rub flavor that you like, the premade mix is your only choice. Fresh dry herbs and spices have way more flavor.

@baneThanks.I agree, mostly. With mustard rub, I feel I get better bark and rub adhesion that lasts throughout the cook. No flavor benefit. Just my preference. I like homemade rubs, but as my son gifted me some, I will give them a try.@D00B
