I am in search for descriptors for the flavor of mushrooms.Any suggestions on how you would describe the flavor of mushrooms; not the fun kind, but when cooking with them.

@billybon3s they taste mushroomy to me. I mean except for laetiporus sulphureus, or "chicken of the woods", which tastes like chicken. And stinks like a motherfucker when you cook it, but that's a different story 🤣

@billybon3s earthy, umami, delicate. Depending on the type of mushrooms, you could say something like mildly sweet or nutty. Depending on the way you cook it, could say it has meat-like taste or smoky flavor.

@bquirky this wasn't one I was expecting, but it is appropriate.

@Pidgeycat "Earthy" and "nutty" are what I'm told for Chestnut mushrooms. Crab/lobster for Lion's Mane.Oysters are my biggest issue.I can taste the differences in the mushrooms, but I don't know how to differentiate on them.Texture I feel has been most appropriate. Crab and lobster fit well, although I feel the taste is kind of misleading. Chestnuts, like asparagus.Oysters, mushroom bacon?

It is in an attempt to ask, similarly, "What words might someone use to describe the flavors in a scotch or a wine?"Some pallets are not a sensitive as others. Some things one can't tell the difference between. Others, once you announce the flavor, you can pick it out. Or, the person would be able describe every little subtle flavor right off the bat.@GMOdysseys @SirRoadwolf

@billybon3s I know it’s common to use oyster mushrooms (and shiitake) as vegan bacon because of their texture and ability to absorb the “bacon flavors”. So I’d say mushroom bacon is a good way to describe them. Oyster can be used in seafood dishes too. I’ve heard anise for oysters, but I can’t recall tasting that.

@Pidgeycat I'm told the anise flavor is in Black Pearl King mushrooms
