I can empathize with your frustration. Many of my friends are artists and musicians, and most of them have embodied the starving artist trope for a substantial number of years. Fortunately as we've all gotten older I have seen nearly all of them find some way to see a return on their artistic endeavors in a way that satisfies them and enables them to continue to create. I've also watched from the green room as a handful of them steadily increased their font size on those festival posters, year after year, until they eventually became the headliners that they remain to this day. But some of the happiest and most energetic artists that I know are the ones who have learned not to be precious with their art ~ how to pour their heart and soul and energy and time and resources into creating even while knowing the entire time that literally no one will see or hear it or even care. Interestingly, I've found those few to be the most creative and productive of the lot of them.
