       @thor some olives come black out of the tree, there are a few species, I'm not entirely sure, but IIRC green are slightly bitter, even when processed. I don't really like olives so...

       apparently, eating olives straight off the plant tastes awful, so they really need to be processed a lot to make them palatable.
