Nothing I hate more than bullshit, while I don't find mealy worms all that appetizing, I do like shrimp, crab, and some other seafoods, all of which have chitin in their exoskeletons. NIH.GOV has this to say about it:Chitin is a poly(β-(1-4)-N-acetyl-D-glucosamine) that was first identified in 1884 and is a natural polysaccharide of major biological importance [1]. Chitin is a nontoxic, biodegradable, and biocompatible polymer [2, 3] with poor solubility at neutral pH [4]. Owing to its chemical properties, chitin has found many applications in biomedicine and biotechnology such as enzyme immobilizer in the food industry [5], immobilization of antibody in the presence of alginate [6], wound dressing and healing [7], anticancer agent [8], tissue engineering, and cancer diagnosis [9]. Chitin and its deacetylated derivative chitosan have been shown to possess immunostimulating properties in mammals and plants [2]. Chitin is a structural component in cell walls of bacteria and fungi, the exoskeleton of crustaceans [10], insects [11], and eggshells of nematodes [12]. Indeed, such organisms benefit from possessing chitin for the purpose of protection from harsh environmental conditions or from the host anti-parasite/pathogen immune responses [11]. Chitin can be sensed by innate immune system and have immunomodulatory effects on the adaptive immunity which will be discussed in this review.

@TylerAbeoJordan Not convinced. There are countries where bugs are regularly on the menu, and I have not read about big pharma earning massive amounts of allergy drugs in those countries. If I were to guess, it varies from species to species, and this compound can be eliminated or decreased by treating the food correctly. Also, there is plenty of food that humans cannot and should not digest before processing/soaking/treating it first. But again, just speculation from my side.

@h4890 Sure. Peoples who grow up eating something have a tolerance for it. Those who don't often develop allergies.This is food allergy 101.I'm only saying that it's going to something like maybe up to 10% who will develop some sort of allergy. Maybe that's only 0.5%, maybe it's 10% ... I don't know, but that's a huge number of people and would mean large profits for pharma.

@TylerAbeoJordan @xianc78 That's completely made up nonsense. Did you even read it? They didn't even spell chitin right. Normal food like mushrooms are full of "chitine", "metamorphic steroids" aren't a thing, and tons of mammals eat insects, I think most mammals, including monkeys who fish for ants

@nanook @xianc78@applejackI don't like BS either, but it sure get's people's attention.Chitin already causes allergic reaction in people.There are many other novel molecules in insects that would also likely trigger immune responses in some people.https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6600546/Note that Chitin in plants, shellfish, and insects differ - chitin differs between insects too.One variation can could trigger an immune response where another won't.

@TylerAbeoJordan This makes me think of gluten intolerance. When I was young, this was completely unheard of. Today, it seems like every other persons all of a sudden has got this, with the resulting profits in that part of the industry.
