@Joe cast iron dutch oven at 450 35 minutes covered 10 minutes uncovered at 400.

@asdfhjkl try finding this and use a 50/50 mix of this whole wheat and regular flour with your starter, even if you do not want a whole wheat loaf. It really helps the starter but do not use too much it will get gummy. Note: this bag is now over $7 at my store!

@HaleakalaCrater Not sure if this will help but maybe try this:-Preheat to 475 (1hour)-Bake lid on 20 min but turn oven off- Remove cover bake 20-25 more minutes, turn oven back on and set to 425.

@HaleakalaCrater I am so glad you said this! Thank you! I have been feeding 100% this and it is bubbly but gummy. I am just playing with temp of water, ratios to see if I can get him to double in 4hr. Fun experiments!

@asdfhjkl watch “sourdough journey” guy Tom on YouTube he did a segment on building a super starter. You can “discard” all but 10% and start building it again.
