Sometimes I soak the bones in a little vinegar to soften them up. You get some of the calcium in the mix that way, but if you want flavor, you need something that dissolves easily and that would be the marrow.I tend to make broth by throwing bones, fat, connective tissue, and an onion and potato in a big pot. Cook on low all day.

I added vegetables as described, then threw in some dried chives, oregano, rosemary, thyme, and red pepper flakes (very few). After almost six hours in the pot, it produced a nice thick broth.
