@TXHolly Personally, I use Light Brown Sugar the most.I don't have an answer for why.😀 Perhaps it was the early recipes that I learned to make as a young teenager. Seems those recipes usually called for Light Brown Sugar.I only use Dark Brown Sugar if a recipe specifically calls for it.

Which I make as necessary. When I'm making dark treacle I make black sugar, it runs 25 to 30 percent molasses.

@thedonnerd The molasses content makes it dark and it grabs moisture from the air. Keep both in my pantry. But, molasses be added to light brown sugar resulting in dark brown sugar. Magic!!

@TXHolly you can make your own..I cup of granulated sugar and 1 tbsp of molasses and for dark 2 table spoons..to one cup sugar ..It's best to make it yourself because it's cheaper and you never have to deal with that hard block of stale ass brown sugar..zero waste
