@gosha @eris yes! Celery is definitely uncommon. You need potatoes, carrots, onions, beets, white cabbage and tomato paste (but I cook without tomato paste). Classic borscht includes beef, but I've been eating vegan soups all my life and vegan borscht can be just as rich!

@virtuallight @gosha the cabbage is a disputed ingredient! my family chooses to not include it. some people add paprika or chilis to theirs too :)we've always done our borsch with chicken boullion, bcos my grandparents always had chickens, but they add cabbage

@eris @virtuallight What a great discussion! My mum (whose recipe this one is inspired by) does add celery, and also paprika as @eris mentioned. Other than that, it's all there, minus the beef and smetana. It turned out really well!Some recipes I saw online call for sugar for extra sweetness, but it didn't seem needed in this case.

@eris@merveilles.town @cel@skinnyver.se @gosha@merveilles.town @virtuallight@merveilles.town It can be slightly sweet and still work, you just might need to add a bit of lemon juice to it.A cool trick to get a nice color borch is to add a bit of sour cream while still boiling it, maybe 10-15 minutes before finishing it, helps it to achieve that deep red color.
