       Today I made compote.I used:- Two red apples- Lemon rind- Two plums- Six dates- WaterI started by cutting the apples in eights. Removed its seeds. Put them all in a pot. Sprinkled with a spoonful of sugar and added water until they were well floating. I didn't add too much out of fear of ending with fruit soup. I set the fire to low as I always like to do. 10 minutes after starting the fire I added the plums. While the boiling was on its way I removed the seed of every date and discarded those that were unhealthy prior to adding them to the pot. 10 minutes later I peeled bits of a lemon. I cut three small pieces to give it just a touch of its essence. I added a glass of water halfway as safety margin.To determine when to turn off the fire I used the apple pieces as gauge. When they turned from white to brown I checked their consistence just to be sure. They were soft so I left it to cool off.The result was good. The juice can stand some diluting upon serving. It has a small amount of little white bubbles. Could it be because of the dates?The apple absorbed a touch of lemon, most won't notice. The dates absorbed lots of lemon. Their taste improved but they ended looking a bit weird and their texture is not the best.

       i dont really mix different "types" of fruits for compote, given the varying textures and cook timesberries are mostly interchangable, all citrus is a given to work well together, apples work well with pear, etc
