A dietetic told me that most digestive problems arise because people eat too much meat. Not meat in general, but too much of it. And itʼs a vicious cycle, because a lot af meat products, especially the fatty ones, generate a gratitude response in our brain, so fatty meat is actually addictive.Have any of you heard about this? If anyone could give me sources on this, that would be great.

@dj @thatguyoverthere @gergely It's true: if you eat for the short term, have some sugar.But if you want independence from that cycle, eat veg and meat with low carbs, and eat less of it.

@thatguyoverthere @dj @gergely It is easiest with bulk vegetables.Most cooks do not know how to incorporate vegetables however.It's a challenge that requires creativity and possibly alcohol.

It's pretty easy to throw a burger or a steak on the grill and make it taste acceptably good.Vegetables require a bit more effort and proper technique.

@dew_the_dew @dj @thatguyoverthere @gergely Yes, I think.But, if you are grilling, cut these up and shishkabob:* Red onion* Zucchini* Green pepper* Eggplant* CauliflowerPaint with mixture of olive oil and chili powder beforehand.For most recipes, I agree, which is why dishes like risottos and wop sauce and stuff are important to do more in the trad manner. Lots of veggies, not overcooked.

A lot of home cooks end up boiling/steaming them and it just turns out badly and then no one wants to eat them. Or they can't use a knife so forget having some fine diced onion in, say, a risotto for flavor, or starting a red sauce with a mirepoix. There are times that you want veggies to be overcooked and incorporated, and times when you want them toothsome. Sometimes you want to carmelize the sugars and sometimes you want some char. Other than that it just comes down to balancing salt, fat, and acid and all I can really note about your kebob recipe is that it has fat and acid (spicy is a form of acid) but not salt unless that was supposed to go without saying.

Honestly for best results, cut everything up and salt it and then pat it dry with a paper towel after an interval (15 minutes, 30m, 1hr whatever) to season it and draw out the moisture and then toss it in oil and chili so it hits the grill dry and you get better marks. This works for meat too and it's part of what makes salt magic compared to what brown people call seasoning.

Otherwise generally I think they gross people out.Steaming is great if you do it quickly but otherwise you get sponge vegetables which leak water. Yeeeccchhh...I like that balancing salt, fat, and acid but texture and balance of internal flavor is huge too.Yes, the salt is sort of... well, it's BBQ, salt is the stuff of life.

@dew_the_dew @dj @thatguyoverthere @gergely One of my favorite ingredients is riced cauliflower.It gets a bad name because goodthinkers try to use it in place of rice (no, use pasta, generally, if you must).But, it's great as a thickener and upping the vegetable count on otherwise tasty dishes.Most people do not know how well it works in chili for example.

Unfortunately for a lot of home cooks steaming is also synonymous with the microwave because if they can't cook they probably aren't going to be boiling a large pot of heavily salted water and preparing an ice bath to stop the cooking process immediately. Luckily that's not necessary because water increases in volume hundreds of times over when it turns to steam so all you really need is a pan and a lid and you do it with white wine.

For me I'd rather just have cauliflower with some char on it if I'm going to be buying it but it does make a pretty good filler (not substitute) for meat in something like a chili. It did not work out too well when Chipotle tried to put it on the menu as a rice substitute because it costs more and so you got a relatively paltry amount and it didn't retain moisture like rice does and so it made everything soggy. In a chili? You'd probably never notice if you didn't know it was in there.
