Personally I'd prefer the API to just not be doing treacherous things in the first place. I think thats what microG is trying to accomplish. Graphines method would probably be more secure assuming google doesn't exploit it on purpose. I'm not an expert on either of these obviously.

It receives NP privileged access, unlike stock OSes, and runs as a standard app with full sandboxing applied. Even if installed, GrapheneOS does not use Google Play services, only the apps inside your user profile do. You can also choose to install Google Play services in specific user profiles and not in others; it's very flexible.microG is not a good choice for either security or privacy; it sends data through Google servers and services, regardless (and apps can do this even without Google Play services or microG installed), and it is always chasing a moving target. It has had security flaws in the past which leaked sensitive information, and it still relies on Google binaries such as DroidGuard in order to function properly.

I mostly want to stop them from having access to browser, file and keyboard activity. Some of that will obviously depend on the app. But if I'm using, say, ungoogled chromium on a custom ROM I'm assuming that's a lot more secure than a stock data vacuuming OS. I don't think I do anything sensitive on apps that actually require microG. Everything else I use comes from fdroid.
