I wouldn't say go BUY it, but its what i go for when places only have tabasco brands. a lot of diners/cafes/cafeteria (namely my work's HQ cafeteria >:( ) have base tabasco, green, and chipotle.

@iwillbite I mean, it depends on how deep you wanna go with it. Like, the concept of it is simple, so you could make a "subpar" one. I'm sure it'll still taste alright. But I understand cuz the way they scramble the egg is interesting, and also the kinds of sauce they use. The fact they might use fried rice sometimes. etc.

@marine @meowski @iwillbite because it's watery. Eggs, especially scrambled eggs are already a sort of emulsion (with added protein) and Tabasco sauce is pretty much just spicy vinegar. In other words, acid. Acid balances out the bland oiliness of fats which is what eggs are. I like Tabasco on eggs.

@PonyPanda @meowski @iwillbite with eggs? Well, I’d probably use a different hot sauce or make my own hot sauce. I do occasionally buy stuff from the place I used to work and I ask if I can get that particular sauce since many of the servers that work there still know me. Otherwise, I’d probably just make my own if I couldn’t get it anymore.

Hot sauce is extremely easy, but you'll need a very good blender or preferably a food processorYou can get complicated and age it or you can just make up a quick sauce but basically you just have to boil down your hot peppers onion and garlic and whatever spices you're using until it's mush in a saucepanThen you add it to a food processor and add a bit of vinegar and water to it until it reaches the consistency and pungency that you want. If you want to stabilize it you can use xanthan gum or cornstarch, if you're doing just a basic Verde or salsa you won't need to do that but it will separate and you'll have to mix it up again Also don't forget to salt it, but any cilantro or lime or special flavors are optional. Depending on the type of pepper you're using You may wish to wear gloves and goggles and definitely open a window and don't get the steam get in your eyes... I made the mistake of cooking up ghost chilies indoors and even the steam got under my gloves and mixed with the sweat and that was a very miserable experience
