My grandmother (originally from Sicily) made it all the time, so someone over there must know what it is.This also seems to contradict your observation: https://www.livitaly.com/is-fettuccine-alfredo-really-italian/BTW, I've had both versions of it (the Americanized, creamy white sauce and the original butter-and-parmesian variant), and both are simply supreme.  But, the butter-and-parmesian variant is simply divine.

       @jens @vertigo @gedvondur @thegibson Yes.Here in Italy, out of a fistful of expensive restaurants in very touristic resorts (specialized in tourist plucking), nobody has Fettuccine Alfredo in the menu.Maybe someone makes them at home, but call them just "pasta in bianco".

       @GustavinoBevilacqua Yeah, exactly. Which is still something you usually serve to sick people, btw. I'll tell you @thegibson, similarly to @leodurruti, I never heard of those dishes - except lasagnas - in an Italian restaurant. Also, I had totally no clue of what "spaghetti ala Homer" were before a minute ago and I can tell you it's totally not italian. @jens @vertigo @gedvondur

They are their own thing and they deserve to exist (not in my house btw) but calling them simply "Italian" is a bit too vague
