Herbivores sometimes eat meat in dire situations but it's not generally a thing they tend to do as it can cause severe health issues. Even in the case of deer they go for the predigested leftovers - not prime meat. Almost all herbivores don't have the pH level to digest meat

I don’t know much about state laws for humans after death, but around the USA, each state has four or five options for getting rid of animal carcasses (from farms or pets..) but ultimately they all have their own drawbacks/positives/negatives… but some are and have been proven to leach extra nutrients or pathogens into local water bodies or ditches that lead to public water consumption. Whether or not these nutrients are harmful to humans is unknown due to water treatment for public water use. But on the way to the bigger water sources, the altered water can disrupt many natural processes on the landscape just from disposal of animals (such as buried in farmers fields decomposing and leaching/run off into water source). Which terrifies me because I would love for people to get their wishes as far as burial or cremation or being buried in a farmers field (for all I care), but I wonder what the difference would be between decomposing animals on the environment vs. decomposing humans in the environment.

I hate throwing perishables into the trash when I have acres of woods around. Took a little walk down the trail with my pot in hand and neatly deposited the remains on the side of a trail--in something like knee-deep snow.Mind you this cabbage stew was about 1/2 pork by volume. Happened by the following day when I was out shooting, and I examined the remains of the stew. Deer tracks everywhere. Several places where deer had bed down. Little deer teeth marks all over the stew. Like a big gnawed down popsicle. They got almost all of it. Blew my mind considering how much hot sauce I'd thrown in that stew.
