@tek made the best cacio e pepe of my life last night in one of mine!* Pici boiling for 20 minutes in a shallow pan* bloomed fresh cracked pepper in a little butter in the CI skillet on high heat towards the end of the pasta cook time* added a little starch water from the pasta to make a simple sauce with the buttery bloomed pepper* transferred cooked pasta to the CI skillet and vigorously stirred in microplaned pecorino romanoYUMPan pizza's up next. I love my cast iron cookware.

@tek lowtech for tek. They work great on open wood fires too. Don't need natural gas or electricity.
