@Krez @Kennyben I just paid $8/pound for marinated beef tri-tip.I know buying steak in a restaurant is more than I want to spend but seeing those prices in the grocery is crazy!

@Kennyben We try to buy the cheap cuts when they're on sale then can them in our pressure canner. I don't actually remember the last time we had meat that wasn't canned, probably a couple years ago.

@Kennyben I can mostly chicken breast, ground beef, beef chunks whatever's on sale, and pork butt/shoulder. Pressure canning meats is easy peasy. The only one that's a little tricky is the ground beef, but everything else you just put into the jar raw, then process normally. It's really quite simple to do :D It was a little scary the first time, but if you've every used an instant pot or electric pressure cooker, this is a very similar thing.

@Kennyben if you have ever had chicken from a metal can, it tastes much better than that. Generally speaking if tastes just like the ingredient you put in. The texture tends toward soft and or shredded. The pork ends up like slow roasted pork , add a bit of bbq sauce and you have some rockin pulled pork. The beef chunks turnout like roast beef, super tender. Ground beef isn’t the best texture wise, it’s a bit soft, but it’s great for pasta sauce, tacos, or hamburger helper type meals.

@Kennyben It’s only scary the first time :). I took these out of the canned just now, 10 pint jars of pork shoulder, cooked in its own yummy fat.Not the prettiest thing, but they’ll be yummy!

@Kennyben you’ve got to buy bulk direct from farmers!!Check out eatwild.com , or Weston Price. Find a local farmer who sells direct. You can buy a whole, half, or quarter cow. Out in CA, I bought a quarter cow: 113 pounds of beef, for only $9 per pound! And it all fit in a $180 5cu chest freezer from Home Depot. Rib Eye, Chuck roasts, short ribs, etc, and 40lbs of ground beef… and the quality surpasses any store bought meat. It’s the way to do it! Delicious, nutritious, and local.
