       Well fuck you for not asking. But here's the thing with brewing Kilju. It's supposed to be just sugar, yeast and water. But it can't be. The Fins are having a laugh.Why can't it be? Because there's not enough nutrients in there to keep the yeast happy and let that brew to a proper dry finish. This is probably why it has a horrible reputation for giving people hangovers and the shits. So how to fix?Well I have proper "Wine Nutrient" in a tub, but it only has 2 ingredients and they are both simple nitrogen suppliers. Basic fertilizer, the exact same stuff you use to grow crops actually. It's like giving your yeast meth. It goes fast but doesn't provide the building blocks. It's great if you're brewing standard juice / hop / grain brews because you have all the stuff you need already. But shit for water + sugar + yeast because it'll stress the hell out of the yeast."HERE HAVE A TON OF METH!""Woah thanks but WTF do I do now?!?!?!"So instead of that, we start off some bakers yeast (very cheap). About 150ml of water and a teaspoon of sugar, then microwave the poor bastards to death after about 30mins letting them get started. (I felt bad pressing start knowing I was killing millions, but it's for the best and it'll all get recycled).So then we stick that in with the water + sugar and now our live yeast has healthy stuff it can munch on with nearly all the building blocks it needs. Nearly?Yes nearly. It's still a very lean brew mix, so in come the raisins. As the experts amongst you know. RAISINS ARE NOT YEAST NUTRIENT! .. Which is bullshit gatekeeping. Sure they don't supply nitrogen. But they supply just about everything else. Vital vitamins and minerals. Better yet, if you chuck them in whole, it's a slow release process as they soak in the brew.Perfect right? Well no. Our water isn't acidic enough yet, so let's chuck a few teaspoons of lemon juice in there to give them a happy place to be.So there you have it.1kg sugar + 150ml dead yeast + 5 tsp lemon juice + 10g raisins + water to fill a 5 litre jug + live yeast.The perfect Kilju recipe.Glad you asked.
