@Jaime I never expected that my aunt's mashed potato recipe would have cream cheese in it, but it does...(Serves ~20, I didn't have 5 lbs of potatoes on hand so I made 2/3 of it.)5 lbs russet or (my preference, Yukon gold) potatoes, peeled & cubed1 cup (2 sticks) butter, cubed1x 8 oz. pkg. of cream cheese1/2 cup heavy cream1/2 cup half-and-half1/2 t salt, adjust to taste1/2 t seasoned salt, adjust to taste1 t black pepper, adjust to taste#recipesQV

@Jaime [cont'd]Boil potatoes in large saucepan, 20-25 min until fork-tender. Drain, mash (with potato masher, if you have one).Add remaining ingredients, whip with mixer, spread into casserole dish, smoothing out surface. Can allow to cool and refrigerate covered at this step, or dot surface with small pieces of butter and bake in 350°F oven for 25-30 minutes until golden brown on top (I forgot this last browning step this time).

@Jaime You can also salt the water for boiling the potatoes if you like, I added about 1/2 t of salt.Enjoy!

@darulharb Very rich! When you bake it and it gets brown on top does the inside still stay creamy? I’m going to have to try this. How was it without baking this time?

@darulharb @Jaime Our daughter uses chicken broth to make hers. When she goes to eat at someone's home she is always asked to bring her mashed potatoes.
