       Medlar jelly, try 2. 1.3kg medlars, 1kg sugar, 2 apples, 1 lemon, 1 tsp citric acid.It passed the wrinkle test this time, set should be guaranteed. Maybe. Hopefully.@hob

       @caprisonne you put a drop of the jelly on a plate that was in the freezer, and after it cools, when you touch it, it should wrinkle on the surface. There's other tests, like the drop test (you turn the plate upside down and it should stick), but i think less reliable.

       @jambamkin its done to sterilize the lids! the hot jelly will kill germs on it, plus you can see any leaks

       @jambamkin yeah it takes a couple hours to set, it's still liquid when you turn it upright. Check this
