       This is THE moistest cake you will ever eat, with great form and texture. It's what a Hostess cupcake dreams of looking, feeling and tasting like when it grows up. If you don't mind coffee it makes a VERY NICE difference. Still delicious without it, though. The original recipe called for light brown sugar. Go dark, trust me on this one.It was also originally an Air Fryer recipe (cover with foil for 35 mins then bake uncovered for 20 more).Chocolate glaze over the top makes it Hostess.

       @StevenDouglas Interesting. Looks very similar to a cake I used to make. It was ALWAYS the one requested by the family for a birthday cake. Agreed it is incredibly moist - and very popular.  I don't like coffee but i would recommend adding it to the recipe.

       @StevenDouglas Two changes Steven and I am a chef. Olive oil is better by FAR than vegetable oil, and half and half or full fat raw milk will make this cake SING!!!! Also maybe use 2 tsp cream of tartar and eliminate the baking powder. It will rise link the sun!

I do use full cream milk (not raw), but half and half and whipping cream are REALLY expensive here, so I avoid it.Part of the magic for me comes from a thought I had when I was young.        @Sabina Yeah I was taken by how THIN the batter was to begin with and how long it took to bake in an air fryer. It's just to shorten the baking time, but it's not exact. Once you do it that way you MUST watch to make sure you don't overbake it.

Being part rat/part cockroach has it's advantages.325F means the oil can never crack, and I don't know if I could even tell much difference regardless what oil is used. I didn't include that in the original recipe post because it's not exact.  The recipe as I originally saw it warned that the batter would be thin, and not to worry about it. So I didn't.        @CYVH1 VERY similar, especially in density and moistness, but because all the black magic cake recipes I've seen call for white (granulated or castor) sugar, it will not come close to the unique flavor profile of this recipe. Need that dark brown sugar and its molasses content for that distinctive "What kind of voodoo chocolate magic is THIS?!" flavor.

       @oystergirl I make a great roast chicken and turkey using mom's recipe, but I will def check his out. I stick with kosher style, so will not use butter with fowl or meat. The Chicken Adobo uses Coconut Milk, so it's Kosher.

       @BlizzyBuzz If it's a kosher chicken, it's already brined. It's part of the kashering process (and it is spelled "kashering" in English...not Koshering.) I do brine non-kosher chicken. It makes a big flavor difference. @oystergirl

       @HectorHeathcote that's funny! But no, brine chicken...especially chicken breasts because they can get dry really quickly. Brining gives them flavor and moisture. You can look up the details online easily. I usually don't brine more than an hour or two, but many people brine longer. That takes too much forethought for me.        @Linnie Years ago I attempted to make the perfect brownie, from scratch. Experimented w/ several cocoa powders and ended up with ‘Bensdorp’ from Holland which is simply amazing.I purchased it from King Arthur Baking (here) https://tinyurl.com/15f2zqxi but others carry it too. BTW, if memory serves Trader Joe’s cocoa is Dutch process too, but not as good as Bensdorp.

Something about that brown sugar (AGAIN). Best tasting, juiciest turkey I'd ever eaten. Everyone, without exception, agreed.PART of that was because of deep frying, but A LOT of it was because of the enhanced flavor due to the dark brown sugar brine. AND SO SIMPLE!

       @StevenDouglasAre you from the south? I only ask because we went to my brother's house in NC for Thanksgiving and she made a Turkey with apricot glaze and while it was good, it was weird. She also made a sweet potato casserole that was sweeter than a pie. Most of the stuff was sweet, and I am used to SAVORY with my Thanksgiving. Big difference in flavor profiles from North to South. Tripod crane used to lower the turkey into the hot oil.Condensed Alton:Bring oil temp to 250ºF, slowly lower the bird, then raise temp to 350ºF. There is NOTHING about it afterwards that says "sweet".I'm not from the south. My childhood was spent in Ohio, my teens in Northern California. Any large turkey-to-oil temperature difference is the main problem.Have to SLOWLY lower the turkey while the oil's at around 250F, THEN raise the oil temperature.

       @SabinaI've made it in many different pans and it all turns out great. Just remember that it rises to double its poured height. I like the loaf pan because it's more area for the almost juicy inside to develop (if you don't overbake it). Get it out soon after it finishes rising and the top stops bubbling.

That moist cake really doesn't need it. Powdered sugar in a sifter shaker also works just fine, lasts a long time!

       @phoebedrobinson I have mid-sized oval cake pan that I use most, but it will work in just about any pan, including a small loaf pan I also use. Double up if you go 9 x 13 or large bundt. Just remember that it will rise to twice its poured height.

       @KittyDugre No, coffee is optional, you can use plain water instead.  The coffee just gives the chocolate a deeper flavor (without tasting coffee).Hershey's syrup should work fine as it's made from cocoa powder, but it has sugar in it so the cake will be a bit sweeter. Try 1/3 to 1/2 cup of the chocolate syrup and pull back a tablespoon or three of the dark brown sugar and a few tablespoons of the water?

       @Katiedid It is VERY LIQUID. Don't worry about that. Trust it. If you preheat the batter in a skillet, on low heat with a silicon spatula constantly scrape-stirring at the bottom, you'll see it rapidly start to thicken at one point. Remove it immediately from the heat, scrape all back into the mixing bowl and whisk out any lumps before pouring into your baking pan. You'll cut the baking time dramatically - my cakes take 18-20 minutes to bake after doing that.

Like, light brown.The quality commercial powder I buy in bulk is very dark, very bitter, and delicious in everything. The cake with the Hershey's powder was brown and…good. That's it. Just…really good. The cakes with the dark powder come out black and beyond delicious.Using Hershey's for icing only now.

       @Klang First, extremely dense and the oil makes it moist. The combination of dark cocoa powder, molasses from the brown sugar, and coffee all combine as an amazingly rich and exotic tasting chocolate - one I can't compare with anything else. My neighbors are all addicted to it now, several asking us to sell it. So I taught my wife how to make it and she sold two cakes and a dozen cupcakes today.Cost: $1.70 (38k VND)Price: $5.30 (120k VND)Wife doesn't know what she's gotten herself into.

In both cases I suspected expired baking powder/soda or temp lower than 325, but wanted to fool-proof it as much as I could anyway. After experimenting, the addition of another egg and the increase in temp meant a cake that baked faster, never fell (even when shook hard), and was a little more dense and pudding-like (a great feature of this cake). I've used up to four eggs with great results.
