Just got done slicing and bagging 32 bags of about 2.5 cups of garden onions for freezing. 80 cups total.Between the onions and the potatoes I got to workout, doing bench press and shoulder press.I'm exhausted, but today was a great day.

@NathanK Oh it's not easy here either. I had to haul many loads of sheep shit in a wheelbarrow to the garden to build up the soil enough to get onions this big.

@RacistZikaBaby Potatoes don't get frozen, they get canned! This is about a quarter of the potatoes from this morning. (Each can is a quart)

@Insomnolant oh duh that’s right you mentioned that earlier (sorry i’m a tad hungover and my brain isn’t working well today). is there a specific method you follow for canning? i’ve done it before with mixed results.

@RacistZikaBaby Haha no worries man!Yeah the method we use is to clean and dice the potatoes, and put the pieces into an empty (and recently cleaned) quart jar. Then pour boiling water into the jar around the potatoes, and then put them into the big canning pot and boil em in that.

@RacistZikaBaby @D00B To add to this, make sure to put the lid on before putting them in the canning pot. Boil them until the spout pops up, then there's this little doohickey you put on top of the lid and then let it cook for forty minutes.

@D00B @RacistZikaBaby Oh also put a half of a teaspoon of salt in the quart jar before putting the lid on and putting it in the canning pot.And a neat trick is to put a splash of vinegar in the water in the canning pot. This prevents any film from building on the side of your canning pot. Which helps you to do batches back to back, since you can only do 7 cans at a time.

@shitgrifter @RacistZikaBaby Who knows? Decades, probably. We ate potatoes canned in 2013 last Christmas and they were great.

@shitgrifter @Insomnolant i’ve eaten some pretty old canned stuff before. my guess is probably close to fifteen to twenty years before you see any significant degeneration.
