@mur2501 i would distinguish between southern and northern Europe, because the further south in Europe you get, the more varied and intense flavours you get. nothing hot, but more herbs, garlic, vinegar, etc.

@mur2501 the dish i cooked above was anything but bland. at least as rich in flavour as a curry, but in a different way.the red stuff on the side was lingonberry jelly, so it kind of serves as the chutney of the dish. it's very sweet and sour.the sauce itself had Norwegian brunost (a sweet whey cheese) added to it. it tastes a bit like salty caramel and dissolves well in sauces.the meat is deer meat and i fried that in oil with salt and pepper. the meat is rich enough in flavour that you could really just drop the sauce and the other stuff, and it would still be delicious.finally, the potatoes are like the rice in Indian dishes. they're the starch of the dish, not meant to taste fancy. they're filler. sometimes with potatoes people add salt, butter and herbs to give them flavour.

@mur2501 @Rudra many foods popular in southern Europe were rather foreign to northern Europe, some of them until quite recently. go back a couple of decades and nobody in Scandinavia would've been familiar with pesto sauce, feta cheese, ravioli, cafe au lait / cafe con leche / cafe latte, etc.

@mur2501 @Rudra pesto sauce is something that might actually be recognisable as sauce to an Indian. it's a paste made of:- crushed garlic- pine nuts- coarse salt- basil leaves- parmesan cheese- olive oilusually sauces in European cuisine are simmered, with stuff like milk, cream, flour, salt, pepper, herbs. in the north, we wouldn't call pesto a sauce since it's more of a paste.

@thor @Rudra Well Indian don't really see their dishes as having sauce, as basically the chicken or the vegetable together with the paste something makes the whole dish. The Indian chutneys are more of the sauce class. Also if you come to India then beware that alot (most) people here call tomato ketchup as sauce.

@mur2501 @Rudra ketchup is technically a sauce, so that makes sense. American BBQ sauce is like ketchup on speed and that's known as a sauce. it's just inconsistent naming.
