Latin America can make lots of little dark ages memes but not deep lore ones, as most if not all myth is European crap. If someone wanted deep lore and remain grounded they would likely only be able to use Peru or Mexico as those settlers already had their own religious beliefs and rather interesting ones at that, otherwise the only other option would be weird historical anecdotes or fiction like the aforementioned El Dorado and such ...
