@saramangas Capital "T" in recipes always traditionally meant tablespoon. Lower case "t" means teaspoon. But I go "tsp" for teaspoon just to make it more clear. I use the T just to conserve space.

@StevenDouglas Oh, thank you! Just made your chocolate cake last night. It’s great! I made a couple of mistakes. 1) Used spray oil for the loaf pan & it left a little taste. Next time I’ll butter & flour the pan. 2) Because I have a fussy stove, I always turn stuff so it doesn’t get overdone. When I turned the pan, the cake fell. Next time, I just won’t turn it. In spite of all that, it’s the recipe I’ve been looking for for chocolate cake for a long, long time. Biscuits are next.

I baked a test cake yesterday at 15 degrees lower temperature and my cake fell in the center - without touching it.Still delicious, but that is likely the problem/solution with fallen cakes that a few here have experienced.Must be baked at 325 minimum. I never trust oven control dials or digital readouts, I have an analog thermometer in the middle rack to confirm at all times.

@SuperNana Funny you should ask. My General Tso Sauce IS a basis for Asian orange chicken. Double the amount of zest. Bread or batter and fry your chicken, coat it in the sauce, and you can either serve it like that or bake it on parchment at 350F for 5-10 minutes to get it more "sticky". @StevenDouglas Made the pancakes in a light iron skillet with plenty of butter. Outsides were crispy, insides moist and fluffy. (Daughter will love them.) Added butter, brown sugar, and drizzled heavy cream toppings. Excellent with home roasted coffee. Planning to make a chocolate mocha variation.

Give this a try, I make it about once every week and half:- 1 whole egg (room temp, important)- 2 tsp lemon juice- 2 tsp white (distilled or white wine) vinegar- ¼ tsp Dijon mustard- ½ tsp salt (or to taste - up to 3/4)- ¼ tsp sugar- 1 cup neutral oilA dash each of onion and garlic powder are really nice additions but you don't need them.

@Mcvirden STICK BLENDER!Nothing compares. If I used a whisk or even a regular blender it would take forever. With a stick blender you just start at the bottom, and hold it there for a good 30-45 seconds while a fully emulsified base is created. Then SLOWLY rise up and push oil down into the mix, holding it down each time until the whole mix is whipped into soft peaks. When refrigerated it takes on the same form as Hellmann's/Best Foods, as you can cut it and it will hold its form.

Here's my Sour Cream Biscuit recipe:Part 1Sour Cream BiscuitsDry Ingredients•2 cups all-purpose flour•1 Tbs baking powder•¼ tsp baking soda•1 ½ tsp salt•1 cup sour cream•~ ½ cup buttermilk (can substitute milk)Pre-heat oven to 450 degrees F.Mix all the dry ingredients together. Add sour cream and continue to mix. Add buttermilk little by little until you get a slightly tacky dough and then no more.

@Mcvirden Looks good, Mike. Very similar to my recipe, which calls for frozen butter to be cut in (for flavor and flakier pockets) rather than sour cream, which is also great. @StevenDouglas Yep - these are NOT the flaky sort of biscuits but they're good nonetheless. I can have a full sheet of biscuits rolled, cut and on the tray before the oven has finished pre-heating.

@Mcvirden Your tips about cutting with sharp edges and keeping the biscuits close together for a better rise are spot on. Mine doesn't call for baking soda but I'll try that next time. Can't get sour cream anywhere in Saigon, it's like it doesn't exist.

You can also use buttermilk in place of the milk and cream.In a mason jar, whisk together 1 cup cream and 1 teaspoon distilled white vinegar or lemon juice. Let sit for 10 minutes, then add ¼ cup whole milk. Stir well to combine.Cover the jar with a lid or cheesecloth secured with a rubber band and let sit at room temperature for 24-48 hours. Chill before serving and enjoy.

Domestic butter (fantastic, tastes like Irish butter) is about $2.50 a lb. Heavy cream (no domestic, all imported), which is all butter is made from, is close to $6/lb. So I avoid cream wherever I can and go straight for the butter.
