#qvrecipe for @Jaime ADOBO CHICKENNot as sour as many Filipino recipesBrown (all sides):2 lbs chicken pieces/chunks in2 T oilRemove and set aside.Brown (til soft/brown):1 med onion (slices) and2 tsp minced garlicStir in:1/2 cup soy sauce1/4 cup vinegar1/4 cup water2 tsp garlic powder1 tsp black pepper1 tsp dk brown sugar1/4 tsp corn starch2 bay leavesAdd chicken back in, bring to a boil, reduce heat med-lo, cover and simmer until chicken is cooked and tender, 30-40 mins.

@Jaime @GRUDGERODRIGUEZ Yeah, there is no "authentic traditional" recipe for Adobo. Just general ingredients. And perfect rice IS important!The biggest difference in Adobo recipes is the quantity and ratio of vinegar to soy sauce.I've been tweaking my adobo recipe (like I do with all my recipes) for a long time.The one I gave you is on about the seventh or eight iteration.It's really good. But I didn't post it before because it's not "THERE" yet. It has to SING.So, feedback, please.

@StevenDouglas @Jaime My grandfather was Ilocano. He used apple cider vinegar. White vinegar is the way to go with brown sugar as it would be really sweet with apple cider vinegar. Some Recipes even use a little ginger. Pickling spice is good too, but use a tea diffuser/cheesecloth or youโll be fighting with pepper corns. Iโm still playing with my recipe also. Love both chicken and pork.God Iโm hungry for Adobo now!!! ๐คฃ
