EVERYONE who tried their food it loved it. And they loved the "fish sauce". What I didn't realize then and learned the hard way a few years later: They weren't using straight fish sauce out of the bottle. I thought I was just buying the wrong kind.

Every brand of fish sauce I tried was INCREDIBLY SALTY! Didn't taste like theirs at all! I didn't call them. I just gave up. Fast forward to around 1986, San Jose, California. I found a small Vietnamese restaurant tucked away in a strip mall. Khanh's Garden PACKED. Half Vietnamese half not, so I knew right away it would be good. And it was - THE BEST. I befriended the owner and within a year offered to rewrite his menu for him. For free. The translation to English was atrocious.

Mr. Khanh said that non-Vietnamese only ordered five things from his menu, but he didn't know why. I laughed. I can't remember the actual words, but the menu descriptions were confusing appetite suppressors. He also said that most didn't want "fish sauce". I told him that it was because he called it that. He looked confused. "What should I call it?""Leave it to me. You worry about the design, I'll give you the words." Friendship deepened.

Nước mắm literally means "water (of) fish". What's served with dishes has the same name as what comes concentrated from the bottle. On his menu it now reads:"Vietnamese dipping sauce""A delightfully pleasant delectable sauce that complements many Vietnamese dishes. Try it, you'll love it."AND THEY DID. According to Mr. Khanh, almost nobody refused it after that. After that he taught me the "secret", which he said wasn't actually a secret. So I'm free to share.

@winslowlady I know how to make REALLY good (truly authentic) pho, but I have literally five fantastic places within a minute's walk from my house. I can get it DELIVERED to my door for free, and each order costs around $1.50. Not worth my time to make, I'm such a criminal!

@winslowlady Ooh, ask your friend if he fire-roasts the onions that go into his soup. Betcha he says yes. Betcha betcha.That's one of the ways you can tell good from cheap pho here in Saigon. White sugar vs. natural caramelized onion sugar. Huge difference in taste if you do a side by side.

@winslowlady I was taught by one of the best. It's traditionally over flames, but I stick a long bbq fork into the root side and TORCH THEM slowly, layer by caramelizing layer - directly into the pot - until there's no onion left.

One of my college friends came over with his family from Saigon in '75 (sponsored by Catholic Church). Over time, I became almost part of their family. Three generations, including six kids, living in a ranch house in Millbrae. We had great times, which included awesome food made by his mother and grandmother (including the dipping sauce!).

But "Vietnamese Egg Rolls" did. Sales went up after that was renamed. He never changed it!

@StevenDouglas Years ago a coworker I've since lost touch with made a curry chicken with lemongrass and white and orange sweet potatoes. I'm not sure if that's close to what you listed. It is made with chicken thighs, which marinade in salt, sugar, curry powder and lemongrass overnight, and then oyster sauce, red chili sauce, and coconut milk. Top with fresh basil. If you have that recipe it would be awesome! She shared the recipe once but on paper and I can't find it anywhere now!

@StevenDouglas I have been eating pho since I got knocked up on my honeymoon like a dumb ass ( I was 19 years old, so over 32 years now). It's the cure for morning sickness for sure. Actually anytime I'm feeling a little off, pho re-sets me. I don't know why, but it always works. Cold, flu, upset stomach.....pho makes it all better. More so for me than chicken soup does. @MMAChow Mein is an overall Asian thing, similarly named in all Asian languages. Fresh Rolls (Goi Cuon) are vegetables, shrimp and pork wrapped in wetted/softened rice paper, traditionally dipped in a hoisin-like sauce with crushed peanuts.

The other is the CONCENTRATED condiment liquid used IN the recipe.So you slowly add fish sauce (the condiment) to the 7-Up in the fish sauce (dipping sauce) recipe.Clearer?

@ilumanous LOVE bánh xèo. I have two places right down the street that serve nothing but that. One is the southern kind, which is HUGE, crispy, and very good. Served with nuoc mam.The other is the Central Highlands kind, and my favorite. It's more like large taco sized with lots of sprouts - with a flavor strikingly like Hong Kong Egg Foo Yung. @StevenDouglas That sounds delicious. Mine is the crispy kind served with nuoc mam.I have an idea for a cook book that I have never seen anyone write. We should collaborate. 👍 A lot of people never cook certain ethnic dishes because they don't understand the ingredients. I thought of a way to simplify things to the point where anyone could understand them.

@StevenDouglas I love to make Egg Foo Yung. When you order it out it is too oily, and they sell it with gravy that is terrible. I am big on omelets, frittatas, quiches, and one of my very favorites is Zucchini pie. I even make it without a crust for myself. I just line the bottom of the pie pan with non stick tinfoil. 👍 It even freezes well.

@Tess4582 Yeah, that's the bummer of it. "Fish Sauce" to the Vietnamese, means both the concentrated condiment and the recipe that is made FROM A LITTLE OF IT.Also, when I told Mr. Khanh not to call it fish sauce, that was for a different reason: It was because most Americans in 1986 were repulsed by the thought of "stinky nasty fish sauce". Which isn't at all what he was serving. So I helped him with some different wording.
