@StevenDouglas @DebradelaiI had a job once where I could eat whatever I wanted wherever I wanted and they didn't care how much it cost. We went easily spend $50 for lunch and over $100 for dinner without the liquor. This was in 2000 era Birmingham Alabama. I went to almost every good restaurant there and gained a fair number of pounds

@EarlThePearls @Debradelai Vietnamese and classic Heartland American, with breads, pies, pastries and pasties all gorgeous and to die for delicious. This an apple pie I coached my son in Florida into making last week. Cream, brown sugar and vanilla glaze. Mom taught me when I was 11 and I've since perfected the process for exact desired results.Complex textures - crispy, flaky AND chewy, it eats WAY better than it looks. No more perfect crust on the face of the earth. For me, anyway.

@benz2003m @EarlThePearls @Debradelai Here's one base secret: Shortening makes for too chewy, not flaky. Butter makes for too flaky, not chewy. Start with 50-50 and adjust to your liking. Next. Frozen butter. Dice it into smaller than pea-sized cubes. Do it in flour so that it coats and the tiny cubes don't stick to one another. Next. Use ice water, don't skimp on the salt, and DO NOT knead or over-handle the dough. Those tiny frozen butter cubes are the flakes in the crust.

Also, if filled, you can reverse the baking sequence (start at 323-350) and save the browning (at 425) for the end. Myriad ways to dress the edges (or top if closed).
