       @tychi I have made dishes - and I'm not exaggerating here - with MULTIPLE, DIFFERENT, vegetables. Like, not one vegetable, but like different ones, at the same time. In one dish.Am I going mad? Possibly. But will I be eating as healthy as I've ever had, when I finally succumb to the darkness calling ahead? Hell yes.

       @tychi OK. Buy a bunch of sweet potatoes. Wash them (just rub them with some water and use your hate for vegetables to provide sufficient rage). Cut them in pieces of a couple centimeters. Throw them in the oven at about 180°C, with some olive oil or whatever oil you have around, some pressed garlic (never too much of that), some cumin, maybe some pepper. Then, depending on the season, throw another vegetable like asparagus or Brussels sprouts in the general direction.

       @tychi My strategy has literally been to throw stuff in the oven and see what comes out, I haven't died yet and it's definitely easy and not too bad

       @Matter @tychi Roasting veggies is one of the easiest and tastiest ways to do it. Just cut almost any veggie into a uniform size, toss them in some olive oil, sprinkle on some seasoning and roast them on a pan at 400 F for roughly 20-40 mins depending on how small you chopped them.
