     to me, because as we know, there are known knowns; there are things we
     know we know. We also know there are known unknowns; that is to say we
     know there are some things we do not know. But there are also unknown

                       Editorials and Swedish julbord

     Yes, yes, yes! I agree with all of you that think that a proper Snooze
     should have an editorial. I feel really bad about not having produced
     anything along that line for a long time now.

        But I also hope you can understand, that it's somewhat hard to
     raise the necessary inspiration to produce something readworthy when
     the in-basket is empty week after week?

        Lately we've been blessed with quite a few contributions, and hence
     the literary spirit suddenly is awoken here in the editors little
     place, so here goes.

        Many moons ago I promised I would give you some recipes for typical
     Swedish dishes. I think I even mentioned 'pickled' salmon. Pickled
     however to me means a certain amount of vinegar, and that's not used
     when making 'gravlax', that I now have seen on the internet has become
     almost as known a word as 'smrgsbord', with variants like Grav
     Lachs, graved salmon and a couple more.

        Gravlax in Swedish means buried salmon, and that is how this dish
     was made initially. The salmon, caught late in the autumn, was buried
     to be frozen during the winter, and then dug up in the spring.
     Nowadays we of course don't need this method to preserve the salmon,
     but as the result was a good tasting fish, we use a modern variety of
     it -- using the freezer and a plastic bag.

        Gravlax is a must on a Swedish 'julbord' -- similar to smrgsbord,
     but bigger (typically 100+ different dishes) and with some Christmas
     specials on it.

        I understand that genuine 'Swedish Grav Lax' is very expensive to
     buy ready made in most other countries, and that's no surprise, since
     making it involves quite a deal of handywork, and it cannot be made by
     machines. The ingredients however should not be expensive, so there's
     a lot of money to be saved here -- apart from the fact that homemade
     always tastes better, right? :)

        Also I've seen on the internet all kinds of strange recipes for
     gravlax, but none that I have seen comes even close to the real McCoy.
     Adding, e.g. pepper and dill is a complete waste of good ingredients,
     since all the stuff will be removed after preparation, and nothing
     will make the salmon taste any different. And most recipes I've seen
     use far to little sugar.

        Next week I'll give you the recipe for Swedish meatballs. Hope you
     can wait that long for it -- here too I found, on the internet, all
     kinds of strange recipes, but more on that next week.

                          Fidonet Policy Change Effort

      As I reported last week, there is interest in changing Fidonet
     Policy. The "IC" echo is the focal point for this effort. Many Fidonet
     Coordinators and Nodes are there. If you are a Fidonet Coordinator, it
     would be appreciated if you would connect to the "IC" echo. If you are
     a Node, you should still connect to the "IC echo since this effort to
     change Fidonet Policy can affect you as well.

      Last week, I reported the count of ZCs and RCs that are connected to
     the IC echo. That number has increased. Please note the ZCs and RC
     shown below and if you know how to contact a ZC or RC not on this
     list, please do so with encouragement to connect to the "IC" echo.

      Since I still have my column, I'd like to take the opportunity to
     thank those that contribute to the Fidonews Publication. Prior to the
     Fidonews Echo, and in the day when Fidonet was the cutting edge of
     technology, the Fidonews Publication was close to the heart of
     Fidonet. In my opinion, it is still a very important part of Fidonet.

      As time, and technology, march on, many seem to forget the Fidonews
     Publication. With the Fidonews Echo in place, it is simply easier to
     post there. I'll agree that the Fidonews Echo is faster and more
     interactive, still, the Fidonews Publication has its place. Some
     people read the Publication that don't read the Echo. Articles in the
     Publication are posted each week in the Echo for discussion. I suppose
     that give the Publication a small plus. :)

      At any rate, I note that Philip Lozier has published a "BBS and
     FidoNet Software News" article. My thanks to you for this, Philip. I
     hope this will become a regular column in the Fidonews Publication. I
     realize that new FTN software and upgrades don't happen as often as
     they once did, but this is still a good subject for the Fidonews.

      It was good to see Carol Shenkenberger publish another recipe. Yes,
     recipes are not really Fidonet related, but the Fidonews is more than
     just software. People make up Fidonet. People like to eat... at least
     I do. :)

      On a closing note. I've recently read that the Fidonews Editor should
     write an editorial each week. While I think that would be nice, please
     remember that the job of the editor in not the same as reporter. It
     takes more than an editorial each week to make a newsletter.

                      FIDONET'S INTERNATIONAL KITCHEN
     =================================================================

                      Gravlax with gravlaxss
                      By Bjrn Felten, 203/208

         1      fillet of salmon (with skin)
         5 cl   sugar
         5 cl   salt

         Sauce:
         3 cl (two tablespoons) mustard
         3 cl   sugar
         3 cl   vinegar
         1      eggyolk
        10 cl   good cooking oil
                salt, pepper & chopped dill


        The fillet must first be frozen for at least three days, this
     because there is an itsy, bitsy, teeny, weeny chance that it can
     contain a small parasite. It is perfectly harmless when dead, and dead
     it will become after three days in the freezer. Obviously the fillet
     must be thawed before continuing with the preparations. :)

        First make sure you get the bones out of the fillet. They are all
     evenly located (with some 5-10mm distance) in the middle of the
     fillet. Place the fillet skinside down and gently run your finger over
     it to locate the bones. Use a pair of pliers to gently remove them.
     Observe the angle they have, so you can pull them out the same angle.

        Now place the fillet in a plastic bag. Mix the sugar and the salt
     and add it into the bag. Give it a good shake, and then try to remove
     as much air as possible before sealing the bag with a knot.

        Place the bag in the fridge and put a weight of some kind on it, a
     table plate or two is enough. Let it marinate for at least three days;
     four or five is even better. Turn the package over once a day, while
     giving it a good rub, to make sure the sugar/salt mixture can reach
     every part of the fillet.

        Now take out the fillet and remove as much of the sugar-salt mix as
     possible. Once again place the fillet skinside down on a cutting plate
     and try to carve as thin slices as possible. The slicing angle should
     be very shallow, so you get as big slices as possible, but angle the
     knife just before you reach the skin and then go horizontally.

        The slices can be rolled to form little roses, or can be just put
     on a plate, nicely arranged.

        The sauce:

        Mix mustard, sugar, vinegar and eggyolk carefully. Then add the oil
     first a drop at a time, while whipping (just as when you make
     mayonnaise) and then at an increasing rate. Season with salt, pepper

     and chopped dill to your own liking. A typical Swedish sauce has
     *lots* of dill in it, but very little salt & pepper.

        This is a typical snack like dish. You can put it on toast or eat
     it alone, with a good dash of the 'gravlaxss' on it. If you make
     roses out of the slices, you can use it to garnish any seafood dish.

     up?"

      The officer replies, "The President is depressed, so he stopped his
     motorcade and is threatening to douse himself in gasoline and set
     himself on fire. He says no one believes his stories about why we went
     to war in Iraq, or the connection between Saddam and al-Quaida, or
     that his tax cuts will help anyone except his wealthy friends; the
     press called him on the lie about Iraq trying to buy uranium from
     Nigeria, and now the NBC White House reporter Campbell Brown is
     threatening to sue him for the sexual innuendo he made to her at his
     recent press conference. So we're taking up a collection for him."

      The lobbyist asks, "How much have you got so far?"

      The officer replies, "About 14 1/2 gallons, but a lot of folks are
     still siphoning.

     It is about time that somewhere in FidoNet, manditory participation/
     acknowledgment has been put in place.  It is far too long that *C's
     can just sit back, process a nodelist, and think they are providing
     any useful service to FidoNet at all, other than fueling their own
     egos of having a feather in their hat.

     The silent participation of the past is one of the major reasons Fido
     has degressed as much as it has.  If it is allowed to continue, then
     the nodelist will continue to be innacurate, dead weight will clog
     things up to no end, and nothing will ever change.

     Never mind the idea of after so many years it has come to the idea of
     having to force any RC's to get their heads out of the sand to get an
     accurate view of where FidoNet is at on this, I think it should be
     taken further... The IC should mandate that the ZC's locate all of
     their RC's, and find out who is dead, and who is not... non-responsive
     RC's should prompt for contacting of any nets supposed to be in the
     region of the dead weight by the ZC, and find out what's up, and make
     repairs accordingly.  RC's that are contacted, should be required to
     do the same with the NC's under them, and NC's with their nodes. If an
     accurate nodelist is to be maintained, this is the only way to do it.
     Any *C not in agreement with that idea, IMO, is not fit to be a *C.
     Having entire nets listed that are defunct, for years in some cases,
     or only have one node operating through an independant feed, is
     ridiculous... having non-responsive RC's is even more ridiculous.

     Everybody cries freedom... freedom is not free.  Everybody cries
     "hobby"... well, hobbies aren't free either, so if contacting RC's
     below somebody, NC's below somebody, or nodes below somebody, costs a
     few bucks, then it is a "hobby related expense" that was basicly
     agreed to be sometimes necessary when the mere node hobbyist decided
     to stick a feather in their hat.

     Having to participate in administrative events (board meetings if you

     will) was also added when that feather got stuck in their hat... any
     *C not wanting to do what it takes, should just return to being an end
     node, and resign the responsibility that comes with their position.

     IMO, the first priority is cleaning all the dead listings out of the
     nodelist, and insuring that future node listings will be accurate...
     then we can move on with issues that relate to FidoNet as a whole, as
     we will have an accurate number as to consider a "majority" of nodes.

     Just my two cents worth on it.

                            How to Submit an Article

     If you wish to submit an article for inclusion in the Fidonews, here
     are some guidelines, if you send it as an attached file; the preferred
     method if you want reasonable control over how the published article
     will appear in the Fidonews:

     a) Plain ASCII text. If you could type it on your keyboard, it's
        probably quite OK...

     b) Put a title to the article. Put the title in two times. The first
        time, on the first line, with an * before it. The second time, on
        the second line, without the * and centered. This will help in the
        format since the title with the * is removed and used in the index,
        the second line will become the headline. On the third line, put
        your name and FidoNet address, present or former. If former, you
        may want to add some other address where you can be reached for
        personal comments.

     c) Deadline for article submission is Sunday, 12:00 UTC.

     Help the Editor by following the above guides. Below are some subjects
     and the file extension for the article as set in the configuration
     file for the making of the Fidonews. Please help by putting the file
     extension of the correct subject on the file name if known..

     If you follow these simple guidelines, there should be little problem
     in getting your article published. If your submission is too far out
     of specs for the Fidonews, it will be returned to you and/or a message
     sent informing you of the problem. This DOES NOT mean that your
     article is not accepted. It means that there is something in it that I
     can not fix and I need your help on it.
