In a large bowl, sift together flour, cinnamon, xanthan gum, baking soda and salt. In second bowl, stir together eggs, pumpkin, sugars, oil and water. Add sugar mixture to dry ingredients; stir just until moistened. Transfer batter into a 9x5-in. loaf pan. Bake until toothpick inserted in center comes out clean, 60-75 minutes, covering with foil halfway through to prevent overbrowning. Cool in pan 10 minutes before removing to wire rack to cool completely.
