      Title: Jeweled Endive Salad
 Categories: Greens, Fruits, Citrus, Vegetables
      Yield: 8 servings
 
      4 oz Bunch watercress
      2    Heads endive; halved
           - lengthwise, thin sliced
      1 c  Pomegranate seeds
      1    Shallot; thinly sliced

MMMMM--------------------------DRESSING-------------------------------
    1/3 c  Olive oil
      3 tb Lemon juice
      2 ts Grated lemon zest
    1/4 ts Salt
    1/8 ts Pepper
 
  In a large bowl, combine watercress, endive, pomegranate
  seeds and shallot.
  
  In a small bowl, whisk the dressing ingredients. Drizzle
  over salad; toss to coat.
