      Title: Mexican Tuna Salad Stuffed Avocados
 Categories: Seafood, Fruits, Vegetables, Herbs, Chilies
      Yield: 5 servings

     12 oz (2 cans) tuna packed in oil
    1/4 c  Chopped poblano pepper; or
           - more to taste
    1/4 c  Diced red onion
    1/4 c  Chopped cilantro
    1/4 c  + 1 tb mayonnaise
      2 ts Adobo sauce from a can of
           - chipotles
           Salt & pepper
      2    (or 3) avocados; halved (you
           - can also use tomatoes)
           Lime wedges; for serving

  Mix together tuna, poblano pepper, onion, cilantro and 1
  tablespoon mayo in a small mixing bowl. Season to taste.
  Fill avocados with tuna salad. Mix together mayo and adobo
  sauce; drizzle over stuffed avocados.

  Serve immediately.

  Makes 4 - 6 servings
