Paia has theramin kits for sale.  Look 'em up on the web @ http://www.paia.com.

Having built a number of their high end synthesizer kits over the years, I can 
vouch for their quality, step by step (hold the COLD end of the iron, not the 
pointy red end...) directions, and suport.

OK... where's my check?
