I do have the version with a window manager but typically it won't be much different between the installs. Server typically has a few more options to install the server. Did you make sure to remove and disable the built in SSH? Or at least make sure your not using the same port. Not sure if they would conflict so I wouldn't use both. I made sure to remove the one on mine. I'm not running headless at least technically. I have it in a VM so I can access it in a browser like it has a head. If you can't shut off your SSH option then make sure its at least a different port.
