MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Tofu Stew Categories: Camping, Stews, Tofu Yield: 4 Servings 1/4 c Oil 1 1/2 c Onion; chopped 1 c Carrots; diced fine 1 c Celery; chopped 2 ts Garlic powder 2 Tofu cakes; cut into 1/2" -cubes 1 1/2 c Zucchini; chopped 2 Tomatoes; diced 1 tb Basil 1/2 ts Parsley 2 c Tomato juice -OR- 6 oz Can tomato paste; diluted 1/3 c Soy sauce 1 c Cheese; grated Tofu is a highly nutritious food made from soybeans. It is rich in high quality protein but has no fat or cholesterol--8 oz of tofu has the same amount of usable protein as 3-1/2 oz of steak. It is an inexpensive, low-calorie food that can be added to any recipe as an egg or cheese substitute. Sauté vegetables, beginning with onions and adding other vegetables at 30 second intervals.
