MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Tennessee Peach Pudding Categories: Fruits, Herbs, Dairy, Puddings Yield: 8 servings 1 c A-P flour 1/2 c Sugar 2 ts Baking powder 1/2 ts Salt 1/2 ts Ground cinnamon 1/2 c Milk 3 c Peaches; sliced, peeled MMMMM--------------------------TOPPING------------------------------- 1 1/2 c Water 1/2 c Sugar 1/2 c Brown sugar; packed 1 tb Butter 1/4 ts Ground nutmeg Vanilla ice cream (optional) Set oven @ 400°F/205°C. Combine flour, sugar, baking powder, salt and, if desired, cinnamon. Stir in milk just until combined; fold in peaches. Spread into a greased 8" square baking dish. For topping, combine water, sugars, butter, and nutmeg in a large saucepan. Bring to a boil, stirring until sugars are dissolved. Pour over peach mixture. Bake until filling is bubbly and a toothpick inserted in topping comes out clean, 40-50 minutes. Serve warm or cold, with ice cream if desired.
