      Title: Dreamy Sweet Potato Bake (Texas Roadhouse)

      Yield: 4 servings
 
      2 lg Sweet potatoes; scrubbed,
           - peeled, quartered
      3 tb Brown sugar
      2 tb Liquid egg whites
    1/4 c  Evaporated milk
    1/8 ts Salt
      1 tb Butter
 
  Place potatoes in saucepan and add just enough water to
  cover; bring to a boil. Cover, reduce heat to low, and
  simmer 15 to 20 minutes, or until potatoes are very
  tender; drain.
  
  Set oven @ 325°F/165°C.
  
  Coat a 1 quart baking dish with cooking spray.
  
  Place potatoes in a large bowl and beat until smooth.
  Add remaining ingredients and mix well. Spoon mixture
  into prepared baking dish.
  
  Bake 25 minutes, or until heated through.
