MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Roadside Diner Cheeseburger Quiche Categories: Pastry, Beef, Vegetables, Cheese, Pork Yield: 8 servings 1 Sheet refrigerated pie - crust 3/4 lb Ground beef 2 Plum tomatoes; seeded, - chopped 1 md Onion; chopped 1/2 c Dill pickle relish 1/2 c Crumbled cooked bacon 5 lg Eggs 1 c Heavy whipping cream 1/2 c Milk 2 ts Prepared mustard 1 ts Hot pepper sauce 1/2 ts Salt 1/4 ts Pepper 1 1/2 c Cheddar cheese; shredded 1/2 c Parmesan cheese; shredded MMMMM---------------------OPTIONAL TOPPINGS-------------------------- Mayonnaise Additional pickle relish Cooked bacon; crumbled Onion; chopped Tomato; chopped Set oven @ 375°F. Unroll crust into a 9" deep-dish pie plate; flute edges and set aside. In a large skillet, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in the tomatoes, onion, relish and bacon. Transfer to prepared crust. In a large bowl, whisk the eggs, cream, milk, mustard, pepper sauce, salt and pepper. Pour over beef mixture. Sprinkle with cheeses. Bake until a knife inserted in center comes out clean, 50-60 minutes. If necessary, cover edges with foil during the last 15 minutes to prevent overbrowning.
