* Exported from MasterCook II * Zippy Squash Casserole Recipe By : Southern Living Magazine, May, 1980 Serving Size : 4 Preparation Time :0:00 Categories : Casserole Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 lg Yellow squash 2 tb Butter -- softened 1 c Cheddar cheese -- shredded 1 md Onion -- chopped 1/2 c Celery -- chopped 3 sl Bacon -- cooked, drained, and - crumbled 2 oz Pimineto -- diced 1 tb Green chiles -- chopped 1/2 ts Salt 1/4 ts Garlic salt 1/8 ts Pepper 1/2 c Breadcrumbs -- soft 1 tb Butter -- melted Wash squash thoroughly; trim off ends. Place in boiling salted water to cover. Cook 15 to 20 minutes or until tender; drain and mash. Combine next 10 ingredients; add squash, stirring well. Spoon squash mixture into a buttered 1-1/2 quart casserole. Combine breadcrumbs and 1 tb melted butter; sprinkle over squash mixture. Bake at 350°F for 20 minutes.
