MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cornbread Dressing Categories: Dressings Yield: 1 Batch 1 1/2 c Corn meal 1/2 c Flour 4 ts Baking powder 1 ts Salt 1 1/2 c Buttermilk 1/2 ts Soda 1 ts Sugar (optional) 1/4 c Fat; melted 2 Eggs; slightly beaten 2 md Onions; chopped 2 1/2 c Celery; chopped 2 qt Bread crumbs; soft 1/4 c Butter 1 1/2 ts Salt 1 ts Poultry seasoning 3 Eggs; up to 4 Chicken or turkey stock 1/2 ts Sage Mix dry ingredients, stir milk into 2 slightly beaten eggs. Put fat in pan, head oven to 400°F and add extra fat to liquid. Stir liquid into dry ingredients. Add onions and celery and bake. Let bread cool, crumble, and add bread crumbs, butter, 1-1/2 ts salt, 1 ts poultry seasoning, 3 or 4 eggs, and enough turkey or chicken stock to moisten. Bake at 325°F/163°C until brown. Note: I usually add 1/2 ts sage and quite a bit of stock, enough so that the dressing is the consistency of a thick batter--a potato masher works well to mix all of this together.
