MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Grandma's Rice Dish Categories: Beef, Rice, Vegetables, Pork, Cheese Yield: 4 servings 1 lb Ground beef 1/3 c Onion; chopped 1/2 c Bell pepper; chopped 2 c Cooked long grain rice 14 1/2 oz Can diced tomatoes; - undrained 11 oz Can corn niblets; drained 2 1/4 oz Sliced ripe olives; drained 6 sl Bacon; cooked crisp, - crumbled 2 ts Chilli spice mix 1 ts Garlic powder 1/2 ts Salt 1 1/2 c Cheddar cheese; shredded, - divided 1/2 c Dry bread crumbs 1 tb Butter; melted Set oven @ 350°F/175°C. In a large skillet, cook beef, onion, and green pepper over medium heat until meat is no longer pink, breaking it into crumbles; drain. Stir in rice, tomatoes, corn, olives, bacon, and seasonings; heat through. Stir in 1 cup cheese until melted. Transfer to a greased 11x7" baking dish. Sprinkle with remaining 1/2 cup cheese. Toss bread crumbs with melted butter; sprinkle over top. Bake, uncovered, 15-20 minutes or until cheese is melted.
