MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cheesy Egg Quesadillas Categories: Breads, Beans, Cheese, Eggs Yield: 2 Servings 3 lg Eggs 3 tb Milk 1/8 ts Pepper 1 tb Butter; +2 ts, divided 4 Flour tortillas (8") 1/2 c Refried beans 1/4 c Salsa 2/3 c Cheddar cheese; shredded Sour cream Additional salsa Set oven @ 425°F/218°C Whisk together eggs, milk, and pepper. In a large nonstick skillet over medium heat, melt 1 tb butter. Add egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Remove from heat. Place 2 tortillas on a baking sheet. Spread with beans; top with eggs, salsa, cheese, and remaining tortillas. Melt remaining 2 ts butter; brush over tops. Bake until golden brown and cheese is melted, 10 to 12 minutes. Serve with sour cream and additional salsa.
