                      Southwestern Chipotle Meatloaf

   2      lb            Ground chuck -- extra lean
   7      oz            Can chipotles in adobo
     1/2  c             Italian breadcrumbs with
                        - imported Romano cheese
     1/4  c             Dried minced onion
     1/2  ts            Dried minced garlic
   2      ts            Ground white pepper
   1      ts            Ground cumin
     1/4  c             Pizza seasoning

Mix all ingredients thoroughly. Place in loaf pan or oven casserole
dish. Cook at 325°F for 1 hour or until the meatloaf is done in the
middle. Let cool and serve.

Suggested toppings:

Spicy ketchup; Buffalo chipotle sauce; cheese.

Serve with:

Baked potatoes with butter and sour cream;
pickled hot jalapeno peppers and carrots.
