MMMMM----- Recipe via Meal-Master (tm) v8.01 Title: Blueberry Muffins Categories: Diabetic, Quickbreads, Breads/bm Yield: 15 Muffins 2 lg Eggs 2 c Whole wheat flour 1/2 ts Cinnamon 1/2 ts Baking soda 1/2 ts Salt 1 c Unsweetened applesauce 1/4 c Light oil (sunflower, corn) 1 c Fresh or frozen blueberries; - without sugar Prepare muffin cups with oil or use paper or foil liners. Preheat oven to 425°F. In a large bowl, stir together flour, cinnamon, baking soda, and salt. Set aside. In a small bowl beat eggs until lemony;then stir in applesauce and oil. Pour egg mixture into the dry ingredients and beat until well mixed. Gently stir in blueberries. Fill miffin cups 2/3rd full. Bake at 425°F for 30 minutes or until nicely browned. Serve warm or cold.
