* Exported from MasterCook * Sweet Corn Bread #2 Serving Size : 6 Preparation Time :0:00 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- -Sue Woodward 1/2 c Unsalted butter -- room temp 2 tb Solid veg. shortening 1 Egg 1 c Masa Harina -- (corn tortilla -mix) 6 tb -Water -- cold 1 pk 16-oz. frozen corn kernels -thawed, chopped 1/2 c Sugar 6 tb Cornmeal 1/4 c Whipping cream 1 t Baking powder 1/2 ts Salt Preheat oven to 350°. Grease an 8" square baking pan. Beat butter and shortening in large bowl until fluffy. Beat in egg. Gradually beat in masa harina, then water. Stir in remaining ingredients. Transfer to prepared pan. Cover with foil and bake until firm to touch, about 50 mins. Let stand 15 mins. Cut into squares and serve warm.
