MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Tempeh Reuben Categories: Sandwiches, Vegetarian Yield: 3 Sandwiches 8 oz Tempeh 1/2 c Sunflower oil Tamari 6 sl Rye or pumpernickel bread 6 sl Swiss cheese (optional) Sauerkraut Spinach leaves Sprouts 1 lg Tomato; sliced -OR- 2 sm Tomatoes; sliced Onion rings Russian dressing First cut tempeh into 3rds, then slice each 3rd in half through the middle to make each piece half as thick as it was. You now have 6 pieces. Heat oil in a 10" frying pan. When hot, set 3 pieces of tempeh into oil, turning over when lightly browned. When other side is done, drain on paper towels. Repeat for other 3 pieces. Tempeh can also be baked rather than fried. To bake tempeh, preheat oven to 400 F. Brush a cookie sheet and tempeh lightly with oil (and a bit of tamari as well on the tempeh). Bake 10 to 15 minutes until nicely browned. Lightly toast bread; if using Swiss cheese, tast bread in oven topped with a few slices of Swiss cheese until melted. Make sandwiches with 2 slices tempeh per sandwich.
