MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Gluten-Free Pizza Crust Categories: Breads Yield: 6 servings 1/4 oz Env active dry yeast 2 ts Sugar 1 c Warm water (115 F/46 C) 3 c Gluten-free baking flour - without xanthan gum; - more for rolling 1 ts Baking powder 1 ts Salt 1/2 c Olive oil 1 lg Egg; room temperature 1 ts Cider vinegar Set oven @ 425 F/218 C. In a small bowl, dissolve yeast and sugar in warm water. In a large bowl, combine flour, baking powder, and salt. Mix in oil, egg, vinegar, and yeast mixture. Beat on medium speed until smooth, dough will be sticky. Gently shape into a ball, place in a greased bowl, turning once to grease the top. Cover with a clean kitchen towel; let rise until doubled, about an hour. Grease a 14" pizza pan. Punch down dough; transfer to prepared pan and press to edges. Bake until lightly browned, 8 to 10 minutes. Top as desired; bake until toppings are heated through, 10 to 12 minutes longer.
